- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 5 large eggs
- 1 cup sugar
- ½ cup (1 stick) unsalted butter, melted and cooled
- ½ cup whole milk
- 1 cup packed (7 ounces)

1. Preheat oven to 350°. Prepare pie crust. Lightly brush with butter, place in the pie plate and crimp edges together, sealing well.

5. In another bowl whisk together orange juice, food coloring, and zest. Add to remaining batter; stir to combine well. Pour batter over lime mixture in pie shell and smooth top.
6. Bake until golden brown and a toothpick inserted into the center comes out clean, about 50 minutes. Cool on a rack for 15 minutes before serving. Garnish with shredded coconut and serve warm.
