For Cake:

  • 2 cups All purpose flour
  • 1 cup Sugar
  • 1 1/2 tsp Baking powder
  • 1 tsp Salt
  • Two sticks of Butter softened to room temperature
  • 3 Egg whites, room temperature
  • 1 tsp Vanilla extract
  • 1 1/2 cups Milk

For Cream:

  • 1 1/2 cups Heavy cream, chilled
  • 2 TBS Vanilla extract

How To Make Vanilla Snack Cake Recipe

Step 1: Preheat the oven to 350 degrees F

Step 2: In a medium bowl, add baking powder, flour, sugar, and salt. Mix well.

Step 3: Mix heavy cream and vanilla extract in another small bowl. Stir well until the vanilla cream is ready to use.

Step 4: In a large bowl (the bowl where you will mix cake batter), add Butter and sugar into it. Mix them until the Butter and sugar are soft and smooth (you can use a hand mixer at low speed for this step).

Step 5: Add egg whites into the butter and sugar mixture, one by one. Continue mixing at low speed until you get a smooth mixture.

Step 6: Add 1/3 of the flour mixture to the egg white and butter mixture. Use a spatula to mix them gently (don’t use a hand mixer for this step).

Add half of the vanilla cream into the batter, and mix gently. When you are done, add 1/3 of the remaining flour mixture. Mix gently again like before.

Add another 1/3 of vanilla cream into the batter. Mix gently and pour the last 1/3 of the flour mixture. Mix gently until you get a smooth batter (again, don’t use a hand mixer for this step).

Step 7: Pour the batter into a well-greased 8-inch cake pan or 9-inch round cake pan. Place in the oven and bake it for 40 minutes at 350 degrees F or until the top of this cake is golden brown and the toothpick inserted into it comes clean. Remove from the oven and transfer it to a wire rack to cool completely.

Step 8: Add heavy cream and vanilla extract into a medium bowl. Mix them well until you get a smooth mixture (you can use a hand mixer for this step).

Step 9: After the cake is cooled completely, cut off the top part so you can see inside (still leaving 3/4 inch above the cake). Put some paste or frosting on top of this cake.

Step 10: Pour the vanilla cream over the cake. Spread it carefully.

Step 11: After you are done spreading the vanilla cream on top of the cake, cut off another 3/4 inch from the top part.

Step 12: Put some paste or frosting on this layer and spread it like before. Repeat step 11 with this layer (this is optional).

Step 13: Keep repeating the previous step until you use up all of your layers (you can use good quality chocolate or caramel for your last layer).

Step 14: Pour the remaining vanilla cream over the cake and spread it nicely.

Step 15: Refrigerate the vanilla snack cake for at least 2 hours before serving.
