  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 3 large eggs
  • 3 tablespoons sour cream
  • 1 tablespoon vanilla extract

For Frosting

  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Directions:

Step 1: Preheat the oven to 350 degrees F. Lightly grease 12 mini bundt pans or muffin tins (to save yourself a lot of trouble, prepare a day in advance).

Step 2: In a large bowl, whisk together flour, baking powder, baking soda and salt. Set aside.

Step 3: Cream butter and sugar until smooth in another large bowl. Beat eggs one at a time, then stir in sour cream and vanilla extract until combined.

Step 4: Gradually add the flour mixture to the egg mixture, mixing just until combined and scraping down the sides of the bowl with a rubber spatula.

Step 5: Divide batter evenly among 12 prepared mini bundt pans (about 1/3 cup each).

Step 6: Bake at 350 degrees F. for 18 to 20 minutes or until the toothpick inserted in the center comes out clean. Cool in pans on wire racks for 15 minutes, then remove cakes from pans; cool entirely on wire racks.

To make the frosting:

Step 1: In a medium bowl, combine butter and powdered sugar. Beat with an electric mixer until smooth. Add milk and vanilla and beat until combined.

Step 2: Pipe or spread frosting onto cooled mini bundts while they are still warm (or they will rub the frosting off).
