How To Prepare Cake Batter Extract Recipes?

Ingredients:

  • 2 cups  Challenge Unsalted Butter , softened
  • 2 cup (250g) granulated sugar
  • 5 cups (492g) all-purpose flour
  • 3 large eggs
  • 1 teaspoons cake batter extract (see note)
  • 1 teaspoons cake batter extract (see note)
  • 1 cup (50g) packed light brown sugar
  • 1 cup holiday sprinkles
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Frosting:

  • 2 cup (226g) Challenge Unsalted Butter , softened
  • 3-4 tablespoons heavy whipping cream
  • 3 cups (575g) powdered sugar
  • ¼ teaspoon salt
  • 1 teaspoon cake batter extract (or vanilla extract)

Making Method:

Step 1: Preheat oven to 350°F. Line 2 muffin trays with 16 cupcake liners.

Step 2: In a stand mixer, beat butter until creamy. Beat in sugars until fluffy, about 3 minutes. Beat in eggs and cake batter extract until combined.

Step 3: In a small bowl, whisk together baking powder and salt, then gradually beat into butter mixture, alternating with flour; mix well to combine. (You can also do this by hand if you don’t have a stand mixer.

Step 4: Divide batter evenly among cupcake liners, filling just over half way. (I use a big rubber spatula to scoop the batter out of the mixing bowl, but you probably could just use a spoon.)

Step 5: Bake for 18-22 minutes, or until toothpick inserted into a muffin comes out clean.

Step 6: Let cool in pan for 5 minutes and then transfer to wire rack to cool completely.

Step 7: For frosting, beat butter and cream until fluffy. Whisk in powdered sugar and salt, then cake batter extract until combined. Add more cream if necessary to make the frosting spreadable.

Step 8: Frost cooled cupcakes (or pour frosting over donuts) and sprinkle with sprinkles.

Note: You can add another teaspoon of cake batter extract to the frosting, if you’d like the flavor stronger.

I have tried using both vanilla extract and cake batter extract in my cake batter frosting (and both work great!), so I can’t say for sure that one is better than the other.
