  • ½ cup All-Purpose Flour
  • 1/8 tsp Salt
  • ¼ tsp Baking Powder
  • 2 tbsp White Sugar Substitute (Splenda)
  • 1 tbsp Unsalted Butter
  • ½ cup Vanilla Soy Milk
  • 2 tbsp Cornstarch
  • 1/3 cup Unsweetened Applesauce
  • 1 tsp Pure Vanilla Extract
  • 1/8 tsp Baking Soda
  • 1/8 tsp Salt


Step 1: Preheat oven to 375 F (190 C). Grease a Bundt pan or round cake pan with butter. 

Step 2: In a medium bowl, mix the flour, salt, and baking powder. Stir. Keep aside.

Step 3: Melt the butter in a saucepan on low heat and whisk in the sugar substitute. Keep stirring till the mixture turns golden brown and thickens up. Remove from heat and set aside to cool down.

Step 4: Dissolve the cornstarch in the vanilla soy milk in a small bowl. Set aside.

Step 5: Add the applesauce and vanilla extract to the cooled sugar mixture. Whisk till well blended.

Step 6: Stir in the soy milk mixture. The mixture will thicken up. Stir in baking powder and baking soda. Stir well till it is smooth.

Step 7: Add flour to the soy milk mixture and stir. Stir till the batter is smooth. Pour batter into the prepared pan.

Step 8: Bake in the oven for 15 – 20 minutes or until the top is golden brown and the toothpick comes out clean. Allow cooling before serving.
