  • 2 cups of all-purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 cups of sugar
  • 1/2 stick of butter, melted and cooled slightly
  • 1 tbsp. vanilla extract or paste
  • Three large eggs, lightly beaten.
  • 1/2 cup of fresh strawberries, sliced.
  • 3/4 cup of heavy cream as needed
  • 1 tsp. pure vanilla extract or paste
  • Powdered sugar for dusting

Making Method

Step 1: Preheat oven to 350ºf. Grease and flour 3 9″ round cake pans or one 10″x15″ rectangle pan.

Step 2: Sift the flour, baking soda and salt into a medium bowl. Set Aside.

Step 3: In a large bowl beat butter and sugar until light in color and fluffy, about 2 minutes on medium speed with an electric or stand mixer.

Add in beaten eggs one at a time mixing for about 30 seconds after each addition. Beat in vanilla extract or paste. Scrape down the sides of the bowl.

Step 4: On low speed, add flour mixture to butter mixture alternating with heavy cream. Start and end with flour mixture. Beat just until the batter is smooth and completely mixed after each addition.

Step 5: Stir strawberries into cake batter , mixing just until incorporated.

Step 6: Spoon into prepped cake pans, spreading evenly over bottom of pan. Bake for about 25 to 30 minutes or until a toothpick inserted in the center comes out clean and dry.

Step 7: Cool in pans for 10 minutes. Transfer to a wire rack and let cool completely.

Step 8: Prepare frosting by combining the heavy cream and vanilla, beating until soft peaks form. Spread over top of cooled cake.

Step 9: Dust with powdered sugar and cut into generous slices.
