2. In a medium bowl, dissolve two tablespoons of sugar into 3/4 cup water over low heat (or microwave ). Stir in a jam to dissolve, then set aside.

3. In a large mixing bowl, beat the egg, butter, milk, and vanilla essence until smooth.

4. Sift the flour and the remaining sugar into another large bowl, then gradually stir the hot liquid ingredients with a wooden spoon until well mixed.

5. Remove from the heat and stir in the sieved lemon-flavored caster sugar.

6. Spoon half of the mixture into two baking pans (21cm x 29cm x 3cm). Place them on a baking sheet and bake for 20 to 25 minutes or until well-risen and springy to the touch.

7. Remove the pans from the oven. Turn the cakes out onto a wire rack to cool.

8. Turn the right way up, cover with a sheet of greaseproof paper, and place in the refrigerator to chill for at least two hours.

9. To prepare the icing, put the remaining sugar into a bowl with 1/2 cup water and leave it to dissolve over low heat or in a microwave oven.

When dissolved, add enough water to make a smooth paste, then stir in 1 tablespoon of lemon extract.

10. Spread over one cake layer, place the second layer on top, then ice the top and sides of the cake.

11. Using a palette knife or wide spatula, smooth over the surface of the cake until completely covered.

12. Decorate with colored sugar paste or fondant before serving.
