  • 4-5 cups of all-purpose flour
  • 3/4 cup lemon juice (1 1/2 sticks)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

  • 2 cups granulated sugar, divided use
  • 1 egg yolk at room temperature
  • 2 whole eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup raspberry preserves

How To Prepare Lemon Raspberry Cake Recipe:

Step 1: Mix flour and baking soda in a large mixing bowl.

Step 2: Place butter in a large mixing bowl over hot, but not boiling, water. Beat to soften, about 30 seconds.

Step 3: Add sugar to the butter and continue beating until pale and fluffy, about 5 minutes, with soft beaters on high speed.

Step 4: Gradually add lemon juice to the sugar mixture while beating with a mixer on medium speed. Beat 2 minutes more until the mixture is light and fluffy. Scrape down the sides of the bowl as needed.

Step 5: Add the eggs and vanilla to the sugar mixture. Beat on medium speed until well mixed, about 1 minute. Scrape down the side of the bowl as needed.

Step 8: Bake in a preheated 350 degrees oven for 35-40 minutes or until the toothpick comes out clean.

Step 9: Turn the cake out onto a rack to cool completely.
