Ingredients By Gulab Jamun Cake Recipe:

For the Cake Base

  • 2 cups All purpose Flour/Maida
  • 2 tsp Baking Powder
  • 2 tsp Baking Soda
  • pinch Salt
  • 1.5 Cup Sugar
  • 4 cup Milk
  • 1 cup Yogurt
  • 2 cup Oil
  • 1 tsp Rabdi Essence refer notes

Cream Frosting:

  • 50 gms Cream Cheese refer notes
  • 250 gms Whipping Cream
  • 50 gms Icing Sugar
  • 4 tsp Rabdi Essence
  • 2 tsp Vanilla Essence
  • Gulab Jamun Filling
  • 6 nos gulab jamuns
  • 3 tbsp slivered pistachios

Cream Filling:

  • 150 gms Whipping Cream
  • 50 gms Icing Sugar
  • 2 tsps Rabdi Essence

Making Procedure:

For the Cake Base:

Step 1: Pre heat oven at 180 degrees C. Line a 8″ round cake pan with parchment paper.

Step 2: Take the 2 cups of flour, baking powder, baking soda and salt in a bowl. Mix well and keep aside.

Step 3: In another bowl mix together 4 cups of milk, 1 cup of oil and 1 tsp of rabdi essence. Add this to the dry mixture and whisk till you get a smooth batter without any lumps.

Step 4: Add this to the prepared cake pan.

Step 5: Bake for 1 hour till a toothpick inserted into the middle comes out clean. Let cool in pan for 10 minutes. Remove from pan and let cool completely.

For Gulab Jamun Filling:

Step 1: Take 6 gulab jamuns and sprinkle with sugar and pistachios on each piece. Roll them tightly and arrange them in a bowl of cold water. Set aside for 15 minutes to drain excess water completely.

Step 2: Take the other half of the jamuns, add them to a blender and grind till smooth.

Step 3: In a bowl mix together 2 cups of whipping cream, 50 gms of icing sugar and 2 tsp of vanilla essence. Whip till stiff peaks are formed as shown below.

Step 4: Add 1/4th cup of the cream mixture to the ground jamuns and mix well.

Step 5: Now in a clean bowl whip 1 cup of whipping cream till stiff peaks are formed.

Step 6: Take 1/3rd of the whipped cream and mix it lightly with the ground jamun mixture.

Step 7: Add this to the remaining whipped cream.

Step 8: Mix well.

Step 9: Take 6 no’s of a piping bag {upto half full} and pipe this into the cake pan as shown below.

Step 10: Cover and let set in freezer for 30 minutes before serving. Garnish with pistachios.

Step 11: Take the cake pan out of freezer and cover it. Let it sit for 10 minutes.

Step 12: Take 2 no’s of a piping bag {upto half full} and pipe on top of each gulab jamun as shown below.

Step 13: Repeat the same process for the other side .

Step 14: Serve chilled. Garnish with pistachios. Enjoy!
