  • 2 cups + 3 tbsp (150 g) Unsalted butter, softened
  • 2 cups (150 g) Almond Meal
  • 2 egg yolk for egg wash
  • 5 large eggs
  • 4 cups (150 g) Granulated Sugar
  • 1 Puff Pastry
  • 2 tsps (5 ml) vanilla extract

Directions Step By Step:

Step 1: Toast the almonds in a preheated 350˚F oven for 8-10 minutes or until they are golden brown and fragrant.

Step 2: Process in a blender 1 cup toasted almonds, 2 cups flour, 2 tbsp (25 g) granulated sugar, 1 tsp baking powder, 1/2 tsp salt, and 1 large egg.

Step 3: Spray a 9 inch round cake pan with nonstick cooking spray, and press the mixture into the pan.

Step 4: Cover the well-greased cake pan with plastic wrap and refrigerate for 1 hour.

Step 5: Bake in preheated 350˚F oven for 25 minutes.

Step 6: Remove from oven and let cool completely before slicing into 12 slices.

Step 7: In a large oven-proof skillet, melt 4 tbsp (50 g) butter and cook 1/2 cup (100 g) sliced almonds for 5 minutes over medium heat.

Step 8: Mix in the 1/4 cup (50 g) granulated sugar, and cook for another 2 minutes.

Step 9: Whilst stirring, add 3/4 cup (150 ml) milk. Place over low heat and heat until it comes to a boil.

Step 10: In a bowl, whisk 4 large eggs, 1/2 cup (100 g) granulated sugar, 1 tsp corn starch, 2 tablespoons (25 ml) milk, and 1 tsp vanilla extract.

Step 11: Add the above mixture to the skillet. Bring the mixture to a boil, and then whisk continuously to create a smooth sauce.

Step 12: Remove the skillet from heat, pour the hot sauce through a strainer back into the skillet (Don’t worry too much if there are some small flecks of chocolate in your sauce as they will settle at the bottom of your pot).

Step 13: Place 2 slices of French King Cake onto individual serving plates, and top with hot sauce.

Step 14: Garnish with toasted almonds, and serve with vanilla ice cream (optional).

What are 2 variations of king cake?

There are two variations of king cake that I know of, a cinnamon version and a French version.

The French version is the one you see in the pictures and it is made from puff pastry instead of yeast dough and it has a currant filling rather than cinnamon filling.

It is my favorite version as far as taste goes, but both taste great! The fun thing about king cake though is that you can create your own variation.
