  • 1/2 teaspoon Baking powder
  • 1/3 cup Sugar
  • 1/3 cup Butter, softened
  • 3 tablespoons Sour cream, room temperature
  • 8 ounces Frozen whipped topping, thawed (usually 1 can)

For Pudding:

  • 3/4 cup Milk
  • 1 (3.8oz) package of Jell-O instant vanilla pudding mix
  • 2 teaspoons Vanilla extract
  • 10 large marshmallows

Making Method:

Step 1: Preheat the oven to 375 degrees F. Grease and flour a 9×13-inch baking pan.

Step 2: In a medium mixing bowl, combine the flour and baking powder for the pancake mix.

Step 3: With an electric mixer, cream the butter and sugar on medium-high speed until light brown and fluffy. Add in the sour cream and beat on low speed until incorporated (mixing does not have to be fast).

Step 4: Remove the mixer bowl from the stand and fold the flour mixture. Stir well until there are no lumps of flour.

Step 5: Beat the mixture on medium speed until smooth. Pour into the prepared baking pan.

Step 6: Bake for 15 to 20 minutes until a toothpick inserted into the middle comes out clean and lightly browned (if you do not have a toothpick, then bake for 20 to 25 minutes). Allow to cool completely before removing from the pan.

For the pudding:

Step 1: In a medium mixing bowl, combine all the pudding ingredients by mixing well.

Step 2: Spoon 1/2 cup of the pudding and spread on each of 8 serving plates in an even layer (using a spoon is easier to control and measure portions).

Step 3: Using an electric mixer, beat the frozen whipped topping for about 20 seconds. Beat on high speed for about another 30 seconds until light and fluffy. Spoon over the pudding layer on each plate (on top of the pudding and not underneath).

Step 4: Cut a small slit in half the cake and place it on the pudding layer. Cut the rest of the cake into cubes. Sprinkle on top of the cake layer (in between each piece).

Step 5: Top with marshmallows, if desired. Serve and enjoy!
