Ingredients For Chocolate Brownie Cake Recipe:
- 3/4 cups (1 1/2 sticks or 170 grams) of unsalted butter, room temperature
- 2 cups (400 grams) of white sugar
- 4 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 3/4 cup (100 grams) all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 12 ounces (350 grams) of semisweet chocolate chips
Chocolate Filling:
- 12 ounces (350 grams) of semisweet chocolate chips or chocolate bar (about 4-5 quarters)
- 1/3 cup (80 ml) half-and-half cream
- 1 teaspoon pure vanilla extract
Directions For Chocolate Brownie Cake Recipe:
Step 1: Preheat the oven to 350°F or 180°C and line an 8 x 4 inch (2 L) square baking pan with parchment paper.
Step 2: Put a small bowl on top of your mixer and set it aside. In the bowl of a mixer, combine the chocolate chips and half&half the cream and stir until smooth.
Add in vanilla extract and mix until well combined. Set aside.
Step 3: In the bowl of a mixer, cream butter on medium speed until smooth, 1-2 minutes. Reduce the rate to medium-low and gradually add in the sugar.
Next, add eggs one at a time, mixing well after each addition. The mixture may appear curdled as you add the eggs. This is normal.
After adding the eggs all the way, about 2 minutes later, add vanilla extract and mix until combined.
Step 4: In a separate bowl, sift together flour, cocoa powder, baking powder and salt. Add half of the flour and half of the chocolate mixture and stir until evenly combined.
Add in more of the flour mixture and chocolate mixture, alternating, until all is added. Stir again with a large wooden spoon until even. Spread the batter into the prepared pan.
Step 5: Bake for about 20-30 minutes or until a toothpick inserted into the centre comes out clean or with just a few moist crumbs attached.
Remove from oven and allow to rest for about 10 minutes before removing from pan to cool completely on a wire rack.
Step 6: Place chocolate chips in a saucepan and melt over medium-low heat to make the filling. Stir in half & half the cream and vanilla extract until melted and smooth.
Step 7: To make the swirls, run a knife through the top of the cooled brownie square in 2 or 3 places, cutting down a third of the way into it.
It is poured slowly and carefully over the top of each cut so that it pools in the middle. Repeat this process 2 more until you have a good portion pooled in the middle.
Step 8: To make cupcakes line a muffin tin with liners. Spoon in batter until 3/4 full and drop the chocolate chip with a small spoon.
Place a piece of wax paper over the top of the batter and use a small spoon to drop on more chocolate chips. Top with more batter until 3/4 full.
Place liners on top of the cupcake tin and bake at 350°F for 15-18 minutes or until a toothpick inserted comes out clean.
Cool cupcakes in the pan for 10 minutes before removing them to a wire rack to cool completely.
